Along with the lava flows that have ravaged it over time, the Sicilian zone of Etna is surrounded by the scent of the sea and the mountains. The extraordinary coexistence of wind, sun, land, and sea produces pistachios, the green gold of this country. The pistachios are the main food attraction of this area, which are grown on the slopes of Mount Etna on small plots and usually do not exceed one hectare.
Almost the entire area is cultivated with pistachios: It looks like the trees from the lava rocks are pointing up to the sky and their roots are being held to the ground. The harvest is done exclusively by hand, in bags that hang on the climbers’ collars and only in the most fortunate cases by a cloth spread under the tree. The harvest takes place every two years so that the tree can rest and regain its strength.
